This vibrant and refreshing wit beer was created by our brewer Tim McDonnell with the intent of making a more rustic, historic version of this beer style. Fresh navel and bitter oranges were gathered from the trees of our friends yards in the neighborhood and added to French oak barrels. We used a traditional witbier yeast to set the tone for this beer and then added our house cultures (brett, lacto, and pedio) to impart more depth. |Feed the Cats||Hazy, Mixed Culture IPA (bottles togo)||7.5%|
Feed the Cats is a recipe developed by our brewer Derrel Furutani. Feed the Cats is also a very important item on our closing checklist (the Cats are incredibly proactive if you’ve somehow overlooked this task). It’s our first attempt at combining the two worlds of mixed culture fermentation and hazy IPA’s. The soft, round palate of a hazy ipa works great with the tropical aromas of El Dorado and Motueka hops. This is even more enhanced by the fruity fermentation character of Saccharomyces Trois yeast and our house mixed cultures. The end result is a complex tropical mix of mango, papaya, and pineapple. This is a chuggable lager beer. Crisp, clean and perfect for throwing back 10 pints in a day. Dry hopped lightly with classic German noble hops Tettnang and Hallertau Mittelfruh. That’s It is a beer developed by our brewer Grant Scholler that utilizes Nelson, El Dorado, and Ekuanot dry hops to achieve a candied fruit and tropical experiences. We used both California Ale and London 3 yeast to create a balance of west coast and hazy styles. That’s It has an incredible pineapple tropical profile that is perfect for all IPA drinkers. This pale beer is crisp, light bodied, and incredibly drinkable. We use an ale yeast at low temps and Noble hops that give this beer Pilsner like qualities, lightness of palate, and fresh floral aromas.More info on Untappd

About The Brewery
We’ve chosen to open a brewery because we think it is a pretty awesome world of discovery, adventure, and, quite simply, fun. We have a pretty charismatic approach to making beer in the neighborhood we live. We make the beer in a 7 bbl brewhouse under the same roof as The Hermosillo. We like to experiment with unique processes, wacky microbes, and local ingredients among other things. The brewery is comprised of four partners: Bob Kunz, Ross Stephenson, Michael Blackman and Dustin Lancaster, with Bob primarily guiding the beer along its path. Overall, Highland Park Brewery has a fairly simple goal of making excellent beer and having a good time along the journey.

The Hermosillo is a neighborhood beer and wine bar in Highland Park, Los Angeles. Previously a night club with an infamous reputation, The Hermosillo now serves craft beer, 30 wines by the glass, and creative bar food.
